Ingredients

Scale

1 wheel (8oz / 250g) Brie cheese (Double or Triple Cream)

4 Fresh Figs, quartered (or dried figs)

¼ cup Honey (Wildflower preferred)

¼ cup Walnuts, roughly chopped

3 sprigs Fresh Thyme

1 French Baguette, sliced for serving

Instructions

1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. Unwrap the Brie but leave the rind intact. Place it on the baking sheet.

3. (Optional) Gently score the top of the rind in a cross-hatch pattern.

4. Bake for 10-12 minutes until the center feels soft and fluid like a water balloon.

5. While baking, toast walnuts in a dry pan for 2 minutes until fragrant.

6. Remove Brie from oven and transfer to a serving board.

7. Top immediately with figs and toasted walnuts.

8. Drizzle generously with honey and garnish with fresh thyme.

9. Serve hot with baguette slices or crackers.

Notes

Don’t overbake or the cheese might collapse.

If figs are out of season, use fig jam or sliced pears.

To reheat, place back in the oven for 5 minutes.
