Ingredients

Scale

Bread Base:

  • 1 large round sourdough or boule loaf (crusty artisan bread)
  • 250g (2 cups) shredded mozzarella cheese
  • 150g (1½ cups) shredded mature cheddar or Gruyère cheese
  • 100g cream cheese, softened
  • 3 tbsp unsalted butter, melted
  • 2 cloves garlic, finely minced
  • 2 tbsp heavy cream
  • ½ tsp salt
  • ¼ tsp black pepper

Cranberry Topping:

  • 1 cup whole cranberry sauce (homemade or premium store-bought)
  • 1 tbsp orange juice
  • 1 tsp honey (optional, for extra shine)

Garnish:

  • Fresh parsley, finely chopped
  • Fresh rosemary sprigs for decoration (optional)

Instructions

1. Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.

2. Using a serrated knife, slice diagonally across the loaf at 1-inch intervals, stopping ½ inch from the bottom. Rotate 90 degrees and repeat to create a diamond grid pattern.

3. In a large bowl, mix mozzarella, cheddar, cream cheese, minced garlic, heavy cream, salt, and pepper until thick and spreadable.

4. Pull open each cut section and stuff cheese mixture deeply into every gap. Brush entire loaf with melted butter.

5. Cover loosely with foil and bake for 15 minutes. Remove foil and bake another 10-15 minutes until golden brown with bubbling cheese.

6. Warm cranberry sauce in a saucepan with orange juice and honey until smooth and glossy (2-3 minutes). Spoon over hot bread.

7. Sprinkle with fresh parsley and rosemary. Let rest 3-4 minutes before serving for perfect cheese pulls.

Notes

  • Choose crusty, high-quality sourdough or artisan boule for best results. Avoid soft sandwich bread.
  • Ensure cream cheese reaches room temperature before mixing to prevent lumps.
  • Don’t skip covering with foil initially—this prevents burning while cheese melts completely.
  • Apply cranberry sauce while both bread and sauce are warm for best adhesion and shine.
  • For extra flavor, add caramelized onions, crispy bacon bits, or cubed Brie to the cheese filling.
  • Store leftovers wrapped in foil in the refrigerator up to 2 days. Reheat at 160°C (325°F) for 10 minutes.
  • You can prepare cheese filling 24 hours ahead and refrigerate until ready to use.
